If you are looking for a recipe for meatloaf, this is it. Meatloaf with mozza cheese throughout and topped with bacon. One of the best meals for wintertime or heck, anytime!
This is another recipe creation for my low carb eating family members. It can be hard at family gatherings to make people happy. To be honest, low carb might even be the easiest to do out of all of them, because meat and cheese. I mean, it’s hard to go wrong with meat and cheese and baked in a pan. Delicious!
This was some SERIOUS comfort food. It's easy to throw together and this also makes it simple to stay on your low carb meal plan. And if you ave this leftover for the next day, it is utterly amazing cold or warmed up for lunches throughout the week!
Look at how amazing that bacon crisps up on top, It also has the bonus of giving the meatloaf a wonderful smoky flavor.

I mean, if you are a bacon lover, and most of us low carbers always find a way to incorporate bacon into a meal idea, this is a perfect meatloaf for you!
So next time that you are hankering for a crazy meatloaf that is fast and filling and a little extra special, this would be it. This was some super serious comfort food and like I said, it’s not super fancy tasting by any means. It’s a simple, good meatloaf that will stick to your ribs and be amazing for your meal planning for the next week!
And no, I didn’t use breadcrumbs because I need to keep this low carb, and it holds together just fine. My meatloaf’s hold together with mainly eggs!

Bacon Mozza Meatloaf

Ingredients
- 1.5 lbs Ground Beef
- 1/2 lb Ground Pork
- 1 Cup Shredded Mozza
- 1 tsp Seasoning salt
- 1 Tbsp Heavy cream
- 2 Large Eggs
- 1 Small white onion diced
- 1 Tbsp Worcestershire Sauce
- 3 Tbsp Sugar free Ketchup (Optional)
- 5 Slices Bacon
Instructions
- Pre-heat your oven at 350 F.
- Put all the ingredients in one bowl, and combine, but do not over mix.
- Press into a loaf pan. Place the strips of bacon across the top of the meatloaf.
- Bake in the oven for 50-60 minutes, until the middle of the meatloaf reaches a temperature of 165 minimum.
- Remove from the oven and let cool 15 minutes before removing from the pan.
