Learning how to make chicken bone broth is essential to any low carb or keto diet. Mainly because it's one of the best salty and satisfying “drinks” to beat the “keto-flu” with and it's rich in electrolytes amongst other things.
How to Make Chicken Bone Broth
The process is pretty straight-forward, simply pull out your slow cooker (crockpot, etc) and add in one chicken carcass (I used a roast chicken carcass from the grocery store) and your assorted spices as well as several cups of water and let it go low and slow overnight or longer. How long you cook it for varies depending on the slow cooker. In my particular case, I let it cook for two full days to make sure I got everything out of the bones. Also, what makes this the best is the use of fresh herbs from the garden. It makes a huge difference in how well this tastes.
What is the difference between bone broth and stock?
Essentially they are the same thing, according to this write up the difference is simply in how people tend to perceive things. Most think of stock as a gelatinous substance and broth as a liquid but they are truly the same thing.

Can you drink bone broth?
Absolutely. In fact, it's one of the best hot alternatives to a traditional soup you can put into your body for the reasons mentioned above to name a few.
I hope you like the recipe. One of the best things I found with this is that unlike a lot of other bone broths I have made, this one smelled amazing instead of giving off that greasy smell you can get from beef broths in the crock-pot. This is from the FRESH HERBS that we used in it. This is the main trick- the fresh herbs end up dissolving into the broth, instead of floating around like the dried ones do. Dry herbs don't always break down into the broth, even after cooking for 2 days. Using the fresh herbs in this was the key. Try and find them at your local grocery store off season if you can!

Ingredients
- 1 Carcass of Roast Chicken
- 1 tsp celery salt
- 4-5 sprigs fresh parsley
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 2 fresh sage leaves
- 1-2 bunch fresh basil
- 5 cloves garlic
- 1 cup carrots
- 1 medium white onion
- 12 cups water
Instructions
- Add everything to crockpot and cook on low for 24-48 hours depending on your slow cooker. You can also pressure cook it for an hour or two to cut this time in half!
- Add in water by the cup when you see that the levels are getting lower. Keep the liquid levels fairly close to the same. After two days this can evaporate to nothing! You will end up with 8-10 cups by the end as you do want it to evaporate a little.
- Strain and serve.
