A simple and satisfying Egg Drop Soup that can be made in minutes anytime!
Combine all ingredients except the eggs in a medium sauce pan and bring to a boil.
Reduce the heat to a simmer.
Crack the eggs into a separate bowl, and beat.
Slowly pour in the beaten eggs while stirring the boiling soup, this should produce ribbons in the soup.
Remove from heat and serve.
For a lower carb soup I use Tamari Sauce which is very similar to Soy Sauce and can usually be found the in the gluten free section of the supermarket. Also this soup is easily doubled if you prefer larger bowls.
