The BEST Cauliflower Mashed Potatoes- Low Carb & Keto

Ingredients

  • 1 medium (3 lb) cauliflower washed and chopped
  • 1/4 cup chicken broth
  • 2 tbsp butter
  • 2 tbsp whipping cream
  • 1 tsp minced garlic
  • 1/4 salt
  • 1/4 tsp pepper

Instructions

  1. In a large, lidded microwave safe container, place the cauliflower florets and 1/4 cup of chicken or vegetable broth. 

  2. Steam on high for 5-6 minutes, then carefully remove the lid and stir. Check if they are VERY soft and if not, return to the microwave and cook for another 2-3 minutes on high.

  3. Once smooth, drain any excess water very well and place into a bowl. Add in the butter, whipping cream, garlic, salt and pepper.

  4. Using an immersion blender, blend the ingredients until they are as smooth as you want. Add more butter or whipping cream to make them thinner.
